BEEF TONGUE IN SALSA VERDE
PREP TIME 15 mins COOK TIME 1 hrs 5 mins TOTAL TIME 1.5 hrs
INGREDIENTS:
- 3 Pound Beef Tongue
- 1 White Onion
- 3 Peeled Garlic Cloves
- 3 Bay Leaves
- 2 tablespoons Sea salt
- 2 Allspice
- 1 clove
- 8 Green tomatoes “Tomatillo”
- 1 Serrano pepper
- Cummin
- Cilantro
INSTRUCTIONS:
- Press cooker 1 hour. Add water to cover the beef tongue, 1/2 white onion, 3 garlic cloves, 3 bay leaves, 2 allspice, 1 clove, a pinch of sea salt
- Boil 8 Green tomatoes “Tomatillos” and 1 Serrano pepper
- The hot spice depends on how much Serrano pepper want to be added
- Blend the boiled Serrano pepper and tomatillos with 2 cups of beef broth
- Fry 1/4 of white onion and add the blend Salsa Verde
- Add a pitch of cummin once the Salsa Verde boils
- Add the beef tongue (Slice or Dice) to the salsa verde
- Add a pinch of sea salt and leave it 5 min in medium heat
SERVING:
- Slice 1 avocado
- Chopped Cilantro
- Chop 1/4 white onion
